Sugar Cane -Rice Pudding

This is one definite special treat. Any sort of non-stick rice can be used and the sweetness can be adjusted by adding Jaggery or any sugar for that matter.This recipe is made by my mum preferably during the Onam Festival.I do miss it at times but when I am home I make sure my mom makes this treat.To add to its richness Cashew nut paste can be added.But I prefer it with Chopped nuts. Adding finely Chopped Dates does wonders

Boil Sugar Cane Juice in a Sauce Pan. When it comes to a boil add 1/2 tsp of Soda to remove all the impurities from the syrup.

Soak rice for about an hour or 2 add this to the boiling syrup and keep stirring ften till the rice is cooked until very soft.

Add Ghee to the cooked pudding and let it boil for about a minute.

Add dry fruits and garnish with some fresh cream. Can be served Chilled or Warm
