Dulche de Leche Ice cream
I have tried many recipes of ice cream but it had never come close to the shop bought ones. This recipe is so simple and perfect that I finally have no complaints on the texture nor the quality of this delish dish. I am ever so indebted to Teji Singh for sharing her eggless Vanilla Ice cream recipe from which this has been adapted.
Dulche de Leche Ice cream

Add the vanilla extract or vanilla beans to the cream.

Beat the cream till it's a smooth, slightly thickened like the melted consistency of ice cream.

Add the dulche de leche to the cream and mix well for about 5 mins.

Pour this into the ice cream mold or a good plastic container and refrigerate for 4-5 hours or until completely set. I know this part is not easy specially if you have two enthusiastic people opening the chiller after every few minutes. :)

Serve with salted caramel sauce or cake slice of your choice. This goes really well with apple pies as well. Enjoi!
