Take a grinding jar. Put the cashews and grind into smooth powder.

Heat a kadai add sugar and water. Stir it a little. Let the sugar dissolve completely. Add cashews powder and mix well. Add cardamom powder and mix well. Stir continuously. Cook it for low flame. Keep stirring to avoid lumps.

When cashews paste has turned thick consistency. Switch off the flame. Grease a plate with ghee. Put the mixture into the greased plate. Fold it with spatula to reduce the temperature. Add 1 tbsp ghee to avoid stickiness and mix well.

Apply ghee on butter paper. Put the mixture on it. Put the other butter paper on top. Gently roll it with rolling pin. Adjust the thickness as your choice. Put silver varak on top. Rest for 1 hour to set. Then cut into diamond shape.

Kaju katli is ready now. Serve it and enjoy as a sweet dish.....😋😋
