Ingredients

  • 1 CupToor water Soaked in cold
  • 1onion Medium chopped
  • 1/4Red Bell Pepper chopped
  • 1 /chilli GreenRed Fresh chopped
  • 1Squash Ylooow sliced small
  • 1salt water Large potatoe boiled in
  • 1 TeaspoonSalt
  • 1 Teaspooncumin seeds
  • 1 TablespoonMasala Vegetable
  • 1 TablespoonGinger/Garlic Turmeric / Paste
  • 10Curry Leaves
  • 1 CanTomatoes
  • 2 TablespoonsOil
  • 1/2 TeaspoonHeeng
  • 1/2 TeaspoonMethi seeds
  • 1/2 TeaspoonMustard seed

Steps

  1. 1

    Heat 3 cups of water in a pan. Add Toor Dal, add 1 teaspoon salt. Bring to a boil and let it simmer for 20 minutes on slow heat until cooked.

    In heavy bottom pan add 2 tablespoon oil and heat on medium heat. Add cumin seeds, mustard seeds, onions, bell peppers, vegetable masala, Ginger/Garlic, Methi, curry leaves, chilli pepper.  Cook 2 minutes and add 1/4 cup water. Add Squash and cook 10 minutes covered - add a little water if necessary. Now add tomatoes and potatoes and cook 10 mts.

    Add cooked lentils and add Heeng and simmer on slow heat for 5 mts. Serve hot.

I have tried to take advantage of herbs and spices and infuse the American and Italian lcuisine. It is sort of East meets West. My dishes are easy to make and everyone can do it. Just come on and join me in my kitchen. We will have a lot fun!I use a unique mixture of Ginger, Garlic and Tumeric (in equal parts) with peppers, like long chilli spicy, habernero even Ghost peppers. It is potent and healthy.Dont't live to Eat, Eat to Live. Worked at Chefluciano's Restuarant in Chicago for 30 years. Now I am retired.
