Ingredients

  • 150 gonion (chopped) / 5 oz .
  • 150 gcarrot (1– cubed) / 5 oz .
  • 150 gcelery (1 stick – sliced) / 5 oz .
  • 150 glettuce (finely shredded) / 5 oz .
  • 1 400 gplum tomatoes chopped / 14 oz . cans
  • 1 150 gbeans tomato sauce baked in / 5 oz . cans
  • 75 glinguine , broken into short lengths / 2½ oz .
  • 700 mlvegetable stock / 24 fl . oz .
  • 2 teaspoonssauce Worcester
  • 2 teaspoonsmixed Italian herbs
  • 2 teaspoonsgarlic powder
  • ½ teaspoonpepper ground
  • “ Spray2Cook ” (a word used to describe any low-cal. non-stick cook’s oil spray)

    Microwave the onion and carrot together for 1½ minutes. Add the celery and microwave for another 1½ minutes.

  2. 2

    Put the microwaved vegetables in a lidded pan, well sprayed with Spray2Cook, on a medium heat for a minute.Stir regularly to ensure nothing sticks.

  3. 3

    Add the (hot) stock. Add the baked beans, plum tomatoes, herbs, pepper and garlic powder then turn up the heat. Bring to boil then simmer for 4 minutes.

  4. 4

    Add the pasta and return to a simmer for 12 minutes. Check the pasta is cooked to you liking.

  5. 5

    Add the lettuce and swirl it around until it wilts, remove the pan from the heat and serve.
