Slow cooker Taco Chicken

As yet another week comes to an end, I hope it has been a good one for you! It was a four day week for me,and I had loads to catch up on workwise between Tues and Wed due to the two short weeks I had the weeks prior. It was overwhelming, but I was glad when it was thursday, and definitely happy that the week is finishing well now that its FRIDAY! YAYYYYYY!!!!
I am always experimenting meal planning and how to get better and efficient at cooking decent meals for my little family. Working full time, running a business on the side, being the cook of the house and running this blog can be very full on, so I actually take sometime out of my schedule to plan my meals every week so that we are not eating take out or toast everyday!
This week I tried the whole cooking the night before, and its been great coming home at 5:30pm and I have had to pull out the meal from the fridge and microwave it and dinner has been ready at 6pm for the 2 year old, and we usually eat 30mins after that. If you have been trying to figure out how to slot in cooking for the family, give this a shot - it does require you planning what you need to cook a day or so prior, so that you are not stressing out right before cooking!
It's cold these days and we are having to wear an extra layer these days especially when we walk out in the morning, so I have been making meals that is fitting for a cold day. Slow cookers are perfect for that and I loved that this turned out great! It smelt amazing!!!!

Ingredients

  • 3chicken breasts skinless
  • 1 canblack beans of
  • 1 cancorn of
  • 1 jarsalsa of
  • 4 tbspstaco of seasoning
  • cilantro Freshly chopped

Steps

  1. 1

    In the slow cooker, pour the cans of black beans and corn, then the chicken breasts, followed by a couple of tbsp of taco seasoning, then the jar of salsa and couple more spoons of seasoning

    Allow it to cook. I had mine going for 6 hours and when I spooned out the chicken breasts, it was tender and falling apart (YUM!)

    Garnish with freshly chopped cilantro

  4. 4

    Cook some rice and spoon over a generous amount of this slow cooked taco chicken on the rice

  5. 5

    I left out the chile kick as my 2 year old was to eat this, but if she wasn't, I would have definitely added some hot chile peppers and kicked up the spice

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US. The day after I landed here, I began a full time job, but I still had a whole lot of free time after 5pm.
