Ingredients

4-servings
  • 1 lbchicken sausage spicy , cut on diagonal into 1/2" pieces
  • 1 lbpotatoes fingerling or red , quartered
  • 1yellow onion medium , cut into eights
  • 1red bell pepper , sliced
  • 1 cupcarrots mini
  • 3 tbspextra-virgin olive oil
  • 4 clovesgarlic , chopped
  • 2 tbsprosemary fresh (or 1 tbsp dried)
  • 1 tspred pepper crushed flakes

Steps

  1. 1

    Preheat oven to 450F.

  2. 2

    Place all ingredients into large roasting pan, being careful not to crowd pan.

  3. 3

    Stir to coat vegetables, potatoes, and sausage with oil and spices.

  4. 4

    Roast for 30 minutes, stirring every 10 minutes, or until potatoes are tender.
