KACCHEY  AAMKIKHATTIMEETHICHUTNEY
Mango is a fruit which brings  joy and happiness whether its unriped or riped. The mango is versatile fruit as we can make  ice-cream, juices, shakes, lassi, cakes, desserts and so on
The raw mango is equally versatile as we can make a number of things out of it like panna, chutneys, pickles,murabbas.
It is also used in making of curries, dals, salads etc
One of its form  I want to share is below

Ingredients

  • 4mangoes (grated) Raw
  • 1 inchGinger piece grated
  • ¼ tspTurmeric
  • ½ tspRed chili flakes
  • Salt as per taste
  • Jaggery as per the sweetness required
  • 1½ tspsPanch phoran (cumin, methi seeds, saunf, nigella seeds, mustard )
  • Curry leaves few
  • 2 tbspsVinegar
  • 2 tbspsOil
  • Water as needed

Steps

  1. 1

    Heat the oil in pan, add panch phoran

  2. 2

    Add grated ginger and curry leaves,fry for a minute

  3. 3

    Add grated mangoes,salt and turmeric

  4. 4

    Add water in a pan (keeping in mind the thickness of the chutney), let it cook for a while

  5. 5

    Add jaggery, chili flakes let it simmer for few minutes

  6. 6

    Lastly add vinegar, allow it to cook till thick
