Palak Paneer

Hello friends, today I am here with a regular dinner menu at my home. This sabji is our all time favourite, a quick healthy yummy creamy palak paneer. I have been making this since years now, and this simple menu becomes happy menu for my kids as they both love Palak in only this form. Other forms I have to usually hide Palak in some or the other way to feed them.
This recipe came to me long back and after that I have improved and adjusted according to our taste. The straining process is a little messy thing to do but that thing gives the smooth creamy final out put which I love. Also this recipe doesnot contains much of spices makes it comfortable to feed kids.
This is a good healthy dinner menu option which goes well with chapattis, paranthas or rice. Instead of paneer cubes you can use fried potatoes cubes. Try it out today and do let me know how it turned out for you.

Clean, wash and then blanch spinach leaves with pinch of sugar n then immediately wash with cold water to retain its green colour. Puree it with little water n strain it with juice strainer.

Puree tomatoes with ginger and garlic to smooth Puree. Strain the mixture with juice strainer. It should be 1 cup of puree.

Take a pan add ghee let it heat a little add jeera, kasuri methi by crushing in between your palms and add besan. Keep the flame slow n roast besan for a minute or so.

Add tomato, ginger garlic puree and fry till ghee is visible on sides.

Add Palak / spinach puree and milk mix well cook for two boils.

Beat fresh cream and add to prepared gravy. Add sugar.

Take paneer cubes take one boil in fresh water n strain it. Add paneer cubes to gravy. Mix well and transfer sabji to serving bowl.

Serve with hot chapatis or paranthas.
