Classic Aloo Matar Samosa

To make classic samosa, boil and mash the potatoes and keep them aside. Then take flour and add a handful of oil to it. Add salt to taste and coriander. Knead the dough. Freeze the dough with cold water. The base of the samosa will become crispy and the flour will be smooth. Adding half a lemon juice to it will make the samosa crispy from the outside and soft from the inside.

Now put some oil in a pan and roast the whole coriander, fennel, cinnamon, cloves and dry red chillies for a while and make a masala of it. Blend it in a mixer and keep it aside.

Then take a pan and add oil in it and fry the green peas. Add the boiled potato masala in it. Add all the spices. Add the masala we have prepared. Add lemon juice and sugar to it. Mix well and let it cool. Then make roti from the tied dough. Fill it with the prepared masala and shape it into a samosa. Fry it and serve it hot.
