Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
Cream the butter, sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract.
In another bowl, mix the flour, baking soda, baking powder, and salt.Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

Scoop tablespoon-sized portions onto the prepared baking tray, leaving space between each cookie.
Bake for 10–12 minutes, until the edges are lightly golden and the centers are still soft.Let the cookies cool on the tray for 5 minutes, then transfer them to a wire rack.
Tips
I used ¾ cup sugar (light brown sugar), which gives the cookies a soft, chewy texture and a delicious caramel flavor. If using regular white sugar, you can use ½ cup sugar + ¼ cup brown sugar for similar results.
Chilling the dough for 20–30 minutes helps make thicker cookies.
Chopped chocolate gives gooey, melty chocolate pockets.
Don't overbake—the cookies will continue to firm up as they cool.
