Ingredients

10-12 minutes
7-8 servings
  • 500 gmchopped Ridge Gourd or Turai or Beerakaya
  • 1 tbspOil
  • 1 tspCumin seeds
  • 1 tbspCoriander seeds
  • 4-5 clovesGarlic
  • 1-2 tbspseedless Tamarind
  • 2whole Green Chillies
  • 2dry Red Chillies
  • 1 tspSalt or to taste
  • For the tempering -
  • 2 tbspOil
  • 1/2 tspCumin Seeds
  • 1/2 tspBlack Mustard Seeds
  • 2 sprigsCurry Leaves
  • 2-3dry Red Chillies
  • 1/8 tspAsafoetida or Hing

Steps

10-12 minutes

    Wash and chop ridge gourd into small pieces. Heat a tablespoon of oil. Add cumin, coriander and sesame seeds. Fry for a minute or two. Add the pieces of ridge gourd now.

    Also add in salt, turmeric, green chillies, garlic cloves, dry red chillies and tamarind paste. Cover and cook on a low heat until soft and done.

    Add a splash of water just so that it doesn't get burnt. Keep a watchful eye over it. As the raw smell vanishes or fades away, take it off the heat. Set aside to cool down a bit.

    Grind to a paste adding little water if required. Meanwhile heat up oil for the tempering.

    Add cumin and mustard seeds. Followed by asafoetida, dry red chillies and curry leaves. As soon as it smells great, add the ground chutney mix to it. Stir well. Heat up for about 2 minutes and that's it.

    It's absolutely ready now. Serve it right away alongside steamed rice and papad. Enjoy!
