Literally made this up based on a dream my husband had. Our son dubbed it "dad's dream pasta". 🤣

Set a large pot of salted water over medium high heat to come to a boil and prepare penne to package directions while executing steps 2-6. Don't worry if your penne is done before the sauce. It will be fine sitting for a bit.

Heat 2 tbs olive oil in a large deep sided skillet over medium heat. Add chicken spread out in a single layer. Allow to cook 3-4 minutes before stirring. Stir around a few times. Add onion powder, garlic powder, chili powder, and 1/2 tsp of salt. Stir again to coat chicken.

Continue to cook until chicken is almost done but not fully cooked through. Move to a plate and tent with foil to keep warm (do NOT eat yet).

Return skillet to medium heat. Add remaining 1 tbs of olive oil and 1 tbs of butter to skillet. When butter is melted add diced onion and cook until translucent, about 7-8 minutes.

Add flour to skillet and whisk to combine with fats and onion. Allow to cook 2-3 minutes to cook out raw taste. Whisk in evaporated milk and regular milk. Bring to a simmer and cook until sauce begins to thicken, whisking frequently.

Add tomatoes, chipotle sauce, chicken and remaining 1/2 tsp salt to skillet. Stir to thoroughly combine everything. Bring back to a simmer for 5-6 more minutes, or until chicken is cooked through. Turn heat down to low. Stir in cheese until melted and fully incorporated. Taste and adjust seasoning to your preference.

Add half the sauce to the penne and stir to combine. Reserve the remainder of the sauce for another use (this is also great for dipping tortilla chips) or top each serving with extra sauce. Enjoy!
Tips
This does come out very mild because even though our son "likes spicy" he still doesn't tolerate high heat levels lol. So, try garnishing each serving with an extra drizzle of chipotle sauce for an added kick/boost in flavor for anyone who wants it!
