Mix the powdered sugar and water together.

Place the mixture over the heat and stir until the powdered sugar has completely dissolved.

Then continue cooking over low heat until it thickens. There are two ways to tell when it has reached the right consistency: first, use a thermometer—the syrup should reach 110°C (230°F). Second, take a small amount between your fingers; when stretched, it should form a thin thread, as shown in the video.

Pour the syrup into a bowl and stir until it turns white. If you are using a copper or stainless-steel pot, you can stir it directly in the same pot.

Add the ground coconut and mix well.

Line the bottom of a dish with plastic wrap and spread the mixture evenly in it. If desired, sprinkle ground pistachios or slivered pistachios over the top. Use a rolling pin or the back of a spoon to press and smooth the mixture very firmly.

If it is not firmly compressed, it will crumble when you cut it. Cover the surface to prevent it from drying out and refrigerate for several hours to set.

Cut into diamond shapes using a cutter or a sharp knife. I found that the part I cut with a knife crumbled, while the cutter gave much cleaner cuts.
Tips
If your desiccated coconut is coarse, pulse it a few times in a grinder or food processor until finely ground.
This sweet dries out very quickly when exposed to air. Store it in an airtight container and only place the amount you plan to serve in a serving dish.
