Let eggs sit at room temperature for 20 minutes.

Bring water to a rolling boil in a pot.

Gently lower eggs into boiling water with a spoon.

Boil eggs: 6-7 min for soft, 9-10 min for medium, 12-13 min for hard.

Immediately transfer eggs to an ice bath for 5 minutes.

Tap, roll, and peel eggs under running water.
Tips
Serve them on toast with a sprinkle of flaky salt, or enjoy them whole for a champion's breakfast.
