Linguine with Canned Clam Sauce
Fast way to create Pasta Alle Vongole

Add olive oil to a large frying pan over low heat. Stir in garlic and shallots, cook for 4 minutes without browning.

Add white wine, increase heat to medium-high, and reduce for 3-4 minutes.

Lower heat, add chopped clams with juice and 3/4 of the parsley. Cook for 3 minutes. Reduce heat to lowest point to keep warm.

Boil linguine in salted water until 1-2 minutes before al dente. You will finish cooking the pasta in the frying pan.

Strain pasta, reserving 2 cups pasta water.

Add the linguine, 1 cup of the pasta water and drained baby clams to the frying pan with the sauce

Stir linguine with the clam sauce constantly over medium-high heat to emulsify for 2 minutes. Add more pasta water as needed to achieve desired sauce consistency.

Remove from heat and stir in butter until melted and glossy.

Serve topped with remaining parsley, optional fresh ground black pepper and optional red pepper flakes.
Tips
Go slow when cooking garlic and shallots to avoid browning, and use reserved pasta water to achieve the perfect sauce consistency.
