Lemon pistachio cake

Lemon Pistachio Cake brings together the nutty richness of pistachios and the bright, refreshing taste of lemon in one delicious bake. With a tender crumb and a delicate citrus aroma, this cake is perfect for afternoon tea, family gatherings, or whenever you're craving a homemade treat.
What I love about Lemon Pistachio Cake is how well the two main ingredients complement each other. Finely ground pistachios add a delicate nuttiness and help give the cake a tender crumb, while fresh lemon zest brings a refreshing citrus note that balances the sweetness. Chopped pistachios also add a little texture, making each slice even more enjoyable.
The preparation is straightforward, and you don't need an elaborate decoration to make this cake stand out. A simple lemon glaze, a sprinkle of chopped pistachios is all you need for a beautiful finish.
This cake is perfect for serving with a cup of tea or coffee, but it also makes a lovely dessert for birthdays, brunches, and special occasions. You can bake it ahead of time, allowing the flavours to settle before slicing and serving.
