Drumstick Leaves Dal Curry
A healthy and flavourful South Indian-style dal made with nutritious drumstick leaves, orange lentils, onion, tomato, garlic and aromatic Indian spices. Comforting, wholesome and perfect to serve with steamed rice or chapati. A simple homemade dish packed with traditional flavours and goodness.
Steps
- 1
Wash the 100 g orange dal. Add it to a pressure cooker with the onion, tomato, 2 garlic cloves, turmeric and 2 cups water. Cook for 2–3 whistles on medium heat, then let the pressure release naturally.
- 2
Heat oil / Ghee and add ½ tsp mustard seeds and a few curry leaves, if available.
- 3
Add garlic and green chillies. Sauté for 30 seconds.
- 4
Add onion and cook until soft and lightly golden.
- 5
Add tomato, turmeric, chilli powder, coriander powder and cumin powder. Cook until the tomato becomes soft and the raw masala smell disappears, around 3–4 minutes.
- 6
Add the 100 g drumstick leaves. Mix well and sauté for 2 minutes.
- 7
Add a splash of water, cover and cook for 5–7 minutes until the leaves are tender.
- 8
Add your cooked, mashed orange dal. Mix, adjust salt and water, and simmer for another 3–5 minutes.
Tips
Drumstick leaves can have a slightly bitter taste, so the onion, garlic and tomato help balance it. If you prefer a tangier dal, add a little tamarind water at the end and simmer for 2–3 minutes.
