Steps
- 1
Prepare the ingredients
Steam and grate the potatoes. Boil and lightly crush the sweet corn. Dry-roast the besan, grate the carrot and finely chop the capsicum and coriander leaves.
- 2
Prepare the mixture
In a large mixing bowl, combine the grated potatoes, paneer, capsicum, carrot, crushed sweet corn and chopped coriander leaves.
- 3
- 4
- 5
Add the spices and flavour
Add the red chilli sauce, roasted cumin powder, coriander powder and salt. Mix everything well.
Gradually add roasted besan until the mixture comes together and holds its shape.
- 6
- 7
Shape the tikkis
Divide the mixture into 18 equal portions. Shape each portion into a small, flat patty.
If the mixture feels too soft, refrigerate it for 10 minutes before shaping.
- 8
Cook until golden
I used a multipurpose roti maker to cook these tikkis.
Multipurpose roti maker: Preheat the appliance. Lightly grease the cooking surface, place the tikkis inside and cook until golden and cooked through, following your appliance's instructions.
- 9
- 10
- 11
Appe pan: Lightly brush the cavities with oil. Cook the tikkis, turning gently, until golden and crisp on both sides.
Air fryer: Preheat to 180°C. Lightly brush the tikkis with oil and air-fry for approximately 12–16 minutes, flipping halfway through.
- 12
Plate and serve
Arrange the golden tikkis on a serving platter and serve hot with your favourite chutney or dipping sauce.
Enjoy these delicious, crispy homemade tikkis! 😋❤️

Tips
• Add roasted besan gradually to avoid making the mixture too dry.
• Start with 1 tablespoon of red chilli sauce and adjust according to your spice preference.
• Ensure the potatoes are not watery before preparing the mixture.
• If the mixture feels soft, refrigerate briefly before shaping.
• Avoid overcrowding the cooking surface for even browning.
