this is a hearty meal, sure to leave you very satisfied. ready in no time too. you can use regular sausages (the stuff you get in hot dogs) OR, if u wanna really pack on the taste, add special italian sausages, or summer sausage, maybe chorizo, or even kielbasa ... possibilities are limitless! however, if you're gonna use chorizo, note that it will release a lot of its own fat (which tastes absolutely sensational) so reduce the amount of oil you use accordingly.

Ingredients

  • 1 Cupsausage pieces
  • 2 Cupspasta uncooked of your choice
  • 1tomato tinned in its juice
  • 1 Tablespoongarlic , finely chopped
  • 1/2 Cupwhite onion , finely chopped
  • 1 Cupmushrooms fresh , sliced
  • 1/4 Cupblack olives , pitted and sliced
  • 1 Cupbell pepper , chopped
  • 2 Tablespoonsolive oil
  • 1/2 Teaspoonoregano
  • 1/4 Teaspoonbasil
  • 1/2chicken bouillon cube , crumbled
  • 1/2 Teaspoonflat-leaf parsley , finely chopped

    In a large pot, bring water to the boil. when it starts to boil, add the pasta with enough salt and oil (preferably salad oil). cook according to package directions until al-dente.

    While the pasta is cooking, heat the olive oil in a medium sized non-stick dish (you can use a ceramic cooking pot too, if you have one)

  3. 3

    Add the chopped garlic and onion. cook till they turn translucent, over medium heat.

  4. 4

    Add the sausage pieces and cook till half done (time depends on the type of sausage you use)

  5. 5

    Add the mushrooms and chicken bouillon, mix well.

  6. 6

    Add the tinned tomatoes. break them up roughly in the dish with a spoon if you want it to be rustic and chunky, or you could puree it in a food processor before adding it. stir it around for around 3 minutes.

  7. 7

    Add the black olives, parsley, oregano and basil. stir, check for seasoning and reduce the heat to a simmer. (you can add salt or pepper at this stage if you so desire)

  8. 8

    When the pasta is done, drain it and immediately add it to the sauce (before it dries).

    Mix well, and serve immediately in individual serving plates, topped with grated parmesan cheese.

Hey! I'm a super busy mommy to 3 year old mixed gender twins. I guess that's enough said about the amount of time i get to spend cooking :). Most of the food I cook is about saving time, but not compromising on flavour. My biggest supporter is my hubby, who loves trying out new recipes and experimenting with different flavours.
