Chicken Corn Mushroom Soup

This is a simple dish I often make for my kids when we have good chicken at home. Usually, they don't voluntarily eat chicken, but when I cook it this way, they finish their meal quickly without any prompting. So whenever we have boiled chicken, I often make chicken soup for them.

Sauté the mushrooms and chicken, seasoning to taste

Bring the chicken broth to a boil, add the sautéed chicken and mushrooms, and season with bouillon or salt. Skim off any foam if necessary

Beat the egg, bring the pot to a rolling boil, then slowly pour in the egg while stirring in a circular motion to create egg ribbons

Mix the cornstarch with water and pour it into the soup pot. Bring to a boil again, then turn off the heat

Ladle into bowls and garnish with cilantro
