Gently separate the pho noodles by hand. Add 1/2 teaspoon MSG (optional) and soy sauce, then toss until the noodles are evenly coated and not sticky.

Wash the greens and cut into 1-1.5 inch (3-4 cm) pieces. Marinate the beef with 1 tablespoon oyster sauce, a little minced garlic, and some vegetable oil. Let it sit for 15 minutes to tenderize the meat.

Heat a pan and sauté the garlic until fragrant. Add the beef and stir-fry quickly. Remove the beef and set aside. Add the greens to the pan, pour in the remaining oyster sauce, and stir-fry. The greens will release some liquid; drain off excess liquid, then add the beef back in and mix well.

Add a little oil to the pan, then stir-fry the noodles for about 3 minutes until heated through and seasoned. Mix the noodles with the stir-fried greens and beef to finish.
