Remove the stems, pistils, and calyxes from the blossoms and discard them.

Wash the blossoms thoroughly and drain well. Pat them dry with a towel so they are completely dry.

Chop the blossoms and the onion.

Heat a little olive oil in a pan and sauté the onion for 1 minute.

Add the blossoms and cook until they are soft.

Heat the tortillas and add the cheese. When the cheese melts, add the squash blossom mixture and a sprig of epazote.

Serve with hot sauce.
