"Lotsa" Vegetable/Beef Soup

Been rainy, windy and chilly here today, so decided to see what I had on hand. Ended up being a pot of soup. Hard to give you exact measurements, as most everything was bits and pieces of bags and containers I had. Put everything in the crock pot for about 6 hours on low....just until the potatoes were done. Served with some corn bread......yummy!! Plus I have enough for dinner Tues, when I come home from work.

Ingredients

  1. 1 lbground beef
  2. 3-4 cupsbeef stock or boullion
  3. 2 small red potatoes
  4. frozen peas and carrots
  5. frozen green beans
  6. frozen whole kernal corn
  7. to tasteseasonings

Cooking Instructions

    Brown beef in a skillet until brown. Use a potato masher to break it up. Drain off grease and add to either a stock pot or a crock pot.

    Add remaining ingredients. Start out using about 3-4 cups beef stock, so that everything is covered. Cook on high for about 4-5 hours or on low for about 6-8. If you are using frozen veggies, the only thing that's really cooking are the potatoes.....if you don't like red ones use whatever kind you like - I also like the skins. Of course, add onions and peppers if you like.

    If you are using a stock pot, I would guess cooking for about 1-2 hours. I like the crock, as you can go about your business and not have to worry about what's on the stove. Hope you enjoy!!

Am an Army Vet who served as a cook for 8 years. Went to the Persian Gulf and spent 2 years in Seoul Korea. Have been a widow for 3 yrs, so don't really get to cook as much as I would like to. Now about the only time I get to "shine" in the kitchen, is when we have something at the local VFW Post. As you can see, I have 2 boys who keep me company and take up much of time.
