Ingredients

90 minutes
6 ppl
  • 250 gpuff pastry
  • 2yellows of eggs
  • 150 gchampion mushrooms
  • 1 tbspdry spices like terragon, basil etc
  • 1 kgmeat of your choice
  • handfulwallnuts
  • 1onion
  • 2 tbsmustard and / horseradish
  • spices for the meat like black pepper,chili,etc
  • 4 tbssunflower oil
  • some salt
  • 4 clovesfresh garlic
  • 1apple if using
  • 60 graisins if using

Steps

90 minutes
  1. 1

    First rub the meat with tasty spices of your choice and also rub it with some mustard and/ or horseradish. Cut holes in it and put the garlic in the holes. Also rub the meat with some oil.

    Put the meat alongside apple slices (if using) into a baking bag, and bake it in the oven till ready

  3. 3

    Create the mushroom cream: fry onions cut into small squares in oil, then add the mushroom that u cut in small pieces. Add spices of your choice.

  4. 4

    Roast the wallnuts in a dry pan and cut them in small pieces, then mix it with the mushroom.Also add the raisins if using.

  5. 5

    Next put the mushroom cream on the meat and cover the whole thing with the puff pastry.

  6. 6

    Cut stars out of an other puff pastry and decorate the wellington with it.

  7. 7

    Put the yellow of the egg on top and bake it in the oven until the puff pastry is ready.

I like to discover new spices and ideas.i never try to follow the "official" rules in cooking, but rather my main ingredient is my passion. When i imagine a dish, first i cook it in my head and i try to imagine how it will taste like. if the ingredients will be in harmony, how can i make it technically and what side dishes would match well. what i have learnt from south-east asian cuisines is, that fresh ingredients are unbeatable. in nutrition, taste, look and color, crispiness and moistness. my recent goal is to use as many fresh herbs and veggies as possible. there are only a few dishes that i dont like, few type of seafood and seaweed. any other ingredient is on my horizon if i plan to create something new,cooking is my art.
