Ingredients

2 servings
  1. potatoes. peeled and cubed
  2. 3eggs
  3. spring onion( half a cup thinly sliced
  4. mayonnaise,as much as you like
  5. boiled chopped chicken(optional)
  6. 1 headlettuce
  7. 2carrots, cleaned and thinly chopped or grated
  8. sugar to sweeten

Steps

  1. 1

    Boil cubed potatoes with a teaspoon of sugar to sweeten. Boil till it is soft.

  2. 2

    Boil eggs, peel and separate the yolk. Then chop up whites.

  3. 3

    Blanch carrots in water but for just a minute so there is still a crunch.

  4. 4

    Drain cooked potatoes, and mix with chopped eggs, spring onions,dash of black pepper,carrots, lettuce and mayonnaise. And if you have chicken you can add to it and give it a good mix and voila. Its ready
