Schweineschnitzel and Zigeunersoße, Gypsy Sauce

Ingredients

4 servings
  1. 2large eggs
  2. 1/2 cupall purpose flour
  3. 1 teaspoonsalt for flour
  4. 1-1/2 poundsboneless pork cutlets 4 cutlets
  5. 3/4 cupbreadcrumbs
  6. to tastesalt
  7. to tasteground black pepper
  8. as neededoil to fry in
  9. as neededZigeunersoße, Gypsy Sauce, see my recipe

Cooking Instructions

  1. 1

    Take a cutlet and put between to pieces of plastic wrap. I used a ziploc plastic bag.

  2. 2

    Take a kitchen mallet and beat the cutlets till evenly a 1/4 inch thick.

    Put the eggs in a bowl and beat them.

  4. 4

    Add flour to another container for dredging

  5. 5

    Same for the breadcrumbs.

  6. 6

    Dredge the cutlet through the flour

  7. 7

    Dredge next through the eggs

  8. 8

    Then finally roll in the breadcrumbs.

  9. 9

    Then fry till done. Move to paper towels. Should be crispy but done inside.
