Cut the small cauliflowers into four pieces each or the large one into eight pieces.

In a pot, make the béchamel by melting the butter and adding the flour, stirring constantly.

Place the cauliflower in a baking dish, pour the béchamel over it, sprinkle the bacon on top, and finally cover with slices of cheese or grated cheese.
