Ingredients

  1. FOR CAULIFLOWER
  2. 1 headcauliflower, cut into pieces
  3. 1shallot, chopped
  4. 2 clovesgarlic, minced
  5. 2 tablespoonchicken broth
  6. 2tablesoon melted butter
  7. 2tablesoons sour cream
  8. 2 tablespoonsheavy cream
  9. 1 teaspoonfresh lemon juice
  10. 1 teaspooncajun seasoning
  11. 1/4 teaspoonblack pepper and salt to taste
  12. 1 teaspoonhot sauce such as franks red hot sauce
  13. 1 cupsharp cheddar cheese, shredded
  14. 10 slicespepperoni, chopped
  15. FOR TOPPING
  16. 2 tablespoonsfresh grated rpmano cheese
  17. 1 cupsharp cheddar cheese, shredded
  18. 1green onion, sliced
  19. 2cherry tomatos, sliced
  20. 1/2 teaspoonitalian seasoning spice mix
  21. 12 slicespepperoni

Cooking Instructions

    Spray an 8 by 8 inch baking disk with non stick spray. Preheat oven to 425°F

    Combine, chicken broth, sour cream, cream, butter, lemon juice, cajun seasoning hot sauce and pepper in a bowl, whisk to combine

    Pour mixture over cauliflower in a microwave safe bowl. Cover and microwave on high until tender about 10 minutes

    Puree in a food processor or blender with the chopped pepperoni and 1 cup of cheddar cheese until smooth

    Spread evenly in prepared pan

  6. 6

    Sprinkle with tomano cheese

  7. 7

    Then add cheddar cheese

  8. 8

    Add green onions and cherry tomato slices

  9. 9

    Add italian seasonig evenly on top

  10. 10

    Add pepperoni in one layer

  11. 11

    Bake about 20 to 25 minutes until hot and cheese has melted

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

Glad I stopped by Cookpad today. I was looking for something "different" to do with my cauliflower!
