Ingredients

120 Minutes
  • 3 1/3 lbsmutton (shoulder or leg is best)
  • 1/2 cupolive oil (120 ml)
  • 3tomatoes, finely chopped
  • 2onions, sliced
  • 4bell peppers (mixed colors)
  • 1 teaspoonground allspice
  • salt
  • pepper

120 Minutes

    Boil the mutton for 10 minutes in a pot, then discard the water.

  2. 2

    Finely chop the tomatoes and slice the onions. Cut the bell peppers into rings.

  3. 3

    Place all the ingredients (including the meat) in a roasting pan, sprinkle with allspice, and season with salt and pepper. Add the olive oil and mix well. Add 1 cup (240 ml) of water.

  4. 4

    Bake in a preheated oven at 350°F (180°C) for about 2 hours (cooking time may vary depending on your oven).
