This pizza dough recipe is from the amazing Jamie Oliver. I've tried many recipes, but ever since I tried this one, I haven't made any other! It's incredible—crispy and full of flavor!

Jamie Oliver adds all the water and olive oil to the yeast mixture. He also mentions that you can substitute the semolina with flour. In that case, it might not be quite as tasty; I've only tried it with semolina and it's wonderful. I've also made it with coarse semolina and with all-purpose flour, and it was still delicious! Mix the yeast and sugar with 1 cup of the warm water and let the yeast activate.

Combine the flour, semolina, and salt in a large bowl. Make a well in the center and pour in the activated yeast, olive oil, and the remaining water.

Start mixing with a fork, then once the dough begins to come together, knead it by hand.

Once you have a nice, smooth dough, place it in a floured bowl, dust the top with flour, and let it rise in a warm place (in the oven at 120°F/50°C) for about 1 hour, or until doubled in size.

Knead the dough again briefly to release any air bubbles. At this stage, you can either freeze it wrapped in plastic wrap or use it right away.

If using immediately, divide the dough into portions, roll it out with a rolling pin, and top it with whatever you like—or whatever you have in the fridge!
