Mix the salt, paprika, oregano, and turmeric with a little olive oil to make a paste, then rub it all over the lamb chops.

Arrange the chops side by side on the oven rack. Place the rack in the middle position of the oven, with a baking pan underneath to catch drips.

Preheat the broiler to 480°F (250°C). Broil on one side for about 20 minutes, then flip and broil the other side for about 15 minutes, until golden and slightly crispy.
