Chicken Quesadilla Pie

This recipe is kind of a mash up between a quesadilla and a quiche. I used leftover chicken I had on hand from making crock pot Mexican chicken earlier in the week, but rotisserie chicken would work great in this as well. It turned out so yummy! The kids actually ate this better than they do regular quesadillas 😝. Recipe adapted from : Thegirlwhoateeverything.com

Cooking Instructions
- 1
Preheat oven to 450°F. Spray a 9 inch pie pan with non-stick cooking spray. Press the tortilla in the pie pan, then lightly spray the top of the tortilla as well. Set aside.
- 2
In a medium mixing bowl, place the chicken, black beans, onion and 1 cup of the cheese. Stir to combine. If you're using unseasoned shredded chicken, then add the seasonings to taste...since my crock pot chicken I used was already seasoned, I skipped this step.
- 3
Pour the chicken mix over the top of the tortilla. Sprinkle the cilantro over the top.
- 4
In a separate medium bowl, whisk together the eggs, milk, flour, salt and baking powder until all combined and blended. Pour over the top of the chicken mix.
- 5
Sprinkle the remaining cup of cheese over the top of the chicken mix.
- 6
Bake for 16-20 minutes, or until a knife inserted into the center comes out clean. Allow to cool for 5 minutes, then slice into wedges and serve.
- 7
You can eat it as is or top it with your favorite quesadilla toppings (some suggestions listed in the ingredient list).

I only had these today...but I think zucchini, tomato, corn, etc. would also taste great! It's also delicious with ground meat too! Recipe by Chakobu cookpad.japan -

This doesn’t look anything like last nights chicken😂 I deboned some roasted chicken and used some random stuff that needed to be used. This is a great way to make a quesadilla without losing the insides to the flip. SherryRandall: The Leftover Chronicles -

Quesadilla Quesadilla
A quesadilla or sometimes specifically a cheese quesadilla, is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes meats, beans, vegetables, and spices, and then cooked on a griddle. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States.A full quesadilla is made with two tortillas that hold a layer of cheese between them. A half is a single tortilla that has been filled with cheese and folded into a half-moon shape. A quick version of the quesadilla, the cheese tortilla, is microwaved and often served to children.
