Chicken Quesadilla Pie

This recipe is kind of a mash up between a quesadilla and a quiche. I used leftover chicken I had on hand from making crock pot Mexican chicken earlier in the week, but rotisserie chicken would work great in this as well. It turned out so yummy! Ingredients

  1. 1large (10 inch burrito size) flour tortilla
  2. 2 cupsshredded, cooked chicken
  3. 1/2 cupcanned black beans, drained and rinsed
  4. 1 tbsp.chopped cilantro
  5. 1/2 cupdiced onion
  6. to tastepepper, cumin, chili powder, smoked paprika
  7. 2 cupsshredded cheddar cheese, divided
  8. 2large eggs
  9. 1 cupmilk
  10. 1 cupflour
  11. 1/4 tsp.salt
  12. 1 tsp.baking powder
  13. Suggested Toppings :
  14. ·sour cream
  15. ·diced avocado
  16. ·sriracha
  17. ·diced tomatoes
  18. ·shredded lettuce
  19. ·pico de gallo
  20. ·salsa

Cooking Instructions

    Preheat oven to 450°F. Spray a 9 inch pie pan with non-stick cooking spray. Press the tortilla in the pie pan, then lightly spray the top of the tortilla as well. Set aside.

    In a medium mixing bowl, place the chicken, black beans, onion and 1 cup of the cheese. Stir to combine. If you're using unseasoned shredded chicken, then add the seasonings to taste...since my crock pot chicken I used was already seasoned, I skipped this step.

    Pour the chicken mix over the top of the tortilla. Sprinkle the cilantro over the top.

    In a separate medium bowl, whisk together the eggs, milk, flour, salt and baking powder until all combined and blended. Pour over the top of the chicken mix.

    Sprinkle the remaining cup of cheese over the top of the chicken mix.

    Bake for 16-20 minutes, or until a knife inserted into the center comes out clean. Allow to cool for 5 minutes, then slice into wedges and serve.

    You can eat it as is or top it with your favorite quesadilla toppings (some suggestions listed in the ingredient list).

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
