Fluffy, tasty eliopitakia (mini olive pies), and of course, if you don't brush them with egg yolk, vegan.

Mix all the ingredients for the filling in a bowl.

Using another bowl, place the flour with the baking powder, the salt and the sugar, mix and then make a well in the middle and pour in the oil. Work the mixture with your hands so that the flour absorbs all the oil and you have a crumbly dough. Then add as much orange juice as it takes to have a soft and fluffy dough (I always use all of the orange juice).

Roll out a thin filo sheet, cut oblong pieces (depending how big you want them to be) place a tbsp of the filling in each and roll them into a roll.

Place the mini olive pies in a baking tray lined with greaseproof paper and after you brush them with egg yolk, sprinkle sesame seeds on top.

Bake in a preheated oven at 180oC for 30-40 minutes or until you see that they are golden brown.
