My grandmother used to make this dish, followed by my mother. Now, I make it too and it is one of our favorites. You can also find it in the book "Σαρακοστιανά". It is one of the foods of the "poor cuisine", since they used to make it with whatever was available in the house, a bit of stale bread, some tomatoes from the garden, an onion or two, some garlic... But the result is great.

Ingredients

  • 2 kgtomatoes 
  • 3-4potatoes 
  • 1 loafstale bread 
  • 2-3onions, finely chopped 
  • 1-2 clovesgarlic, finely chopped 
  • (Roughly) 1 bunch of parsley, finely chopped 
  • Olive oil
  • Salt 
  • Pepper 
  • Cumin

Steps

  1. 1

    Cut the bread into slices and crumble them into breadcrumbs. Keep crust.

  2. 2

    Add the onion, garlic and parsley to the breadcrumbs.

  3. 3

    Add salt, pepper and cumin and mix. 

  4. 4

    Line the bottom of the baking tray with a layer of potatoes cut into slices and salt lightly. 

  5. 5

    Spread a layer of breadcrumbs over the potatoes. 

  6. 6

    Continue with a layer of tomatos (better peeled) in slices and salt sparingly (careful with the salt since the breadcrumbs already have some). 

  7. 7

    Spread a layer of breadcrumbs on the tomatoes. 

  8. 8

    Continue in the same way until you run out of ingredients. 

  9. 9

    Always finish off with the breadcrumbs. 

  10. 10

    Soak the bread crusts (in the tomato juice or in plain water) but without dissolving them and spread them on the top of our baking tray.

  11. 11

    Add the olive oil (according to taste!).

  12. 12

    Bake in the oven, medium heat. 

  13. 13

    It is ready when you dip a knife into it and it comes out dry.
