
Yogurt ice cream with honey and pistachios

This is one of the successful recipes by Argiro Barbarigou, it is really worth making it. The ice cream is great even withoug eggs and doesn't pack too many fats for those who watch their diet. I made it using low fat yogurt and milk!

Steps

Place the sugar and the water in a pot. Mix and let it boil for a couple of minutes. Add the honey. Set it aside to cool a little.

Boil the milk in a pot. Set it aside to cool.

Place the yogurt in a bowl and gradually add the milk little by little whisking so that it dissolves. Add the cold (by now) syrup. Whisk thoroughly.

Place the bowl with the mixture in the freezer until it starts getting firm. Then mix using a hand mixer until gets fluffy and doesn't have any ice crystals.

Freeze the mixture once more and repeat the same process 3-4 times until completely fluffy.

Add the pistachios after the last time using the hand mixer and fold them in so that they are evenly distributed. Garnish with honey and pistachios.
