Ginger and Honey Cookies
Honestly, I didn't plan to start with holiday recipes so soon, but when you go outside and see everything lit up, you can already feel that festive atmosphere reminding us that Christmas (for better or worse) is just around the corner.
And what about the time when supermarkets start stocking up on nougats, shortbreads, and other sweets of the season? Doesn't it seem like they start earlier every year? It's similar to what happens with the Christmas lottery...
Well, since we have to adapt to everything and going against the tide usually doesn't yield good results, I hereby declare the holiday season open on the blog. This includes today's recipe, lemon and orange shortbreads, truffles, and some other surprises that I'll tell you about later.
Today's cookies can be made any time of the year, but it seems that we associate ginger in sweets more with Christmas, especially in Central and Northern European countries. There, at the markets set up during this time, you can easily find cookies like these, although never as good as freshly baked ones. They really are delicious. Are you up for making them?

Mix the dry ingredients in one bowl: the flour, cornstarch, baking powder, ginger, sugar, and salt.
In another bowl, combine the butter (at room temperature) with the honey, egg, and vanilla.

Incorporate the butter mixture into the dry ingredients and knead well with your hands. You'll get a very manageable dough.
Roll it out with a rolling pin and use a cookie cutter to make shapes. I made stars and Christmas trees. You'll get quite a few, about 25 cookies.
