This is a recipe I learned from a German baker. He used it for his bakery so it makes quite a bit! If you have a scale, just reduce the amount as needed. Makes about 1 pint (2 cups or 500 ml).

  1. 200 gground cinnamon (1 1/2 US cup)
  2. 80 gground coriander (10 level Tbsp or 2/3 US cup)
  3. 4 gground cloves (2 level teaspoons)
  4. 1 1/2 gallspice (level 3/4 teaspoon)
  5. 1 1/2 gground mace (level 3/4 teaspoon)
  6. 1 1/2 gground cardamom (level 3/4 teaspoon)

    Mix all spices together in a large bowl.
