Onion Soup with Cheese and Hard-Boiled Egg

Slice the onions into thin strips.

Put the butter in a saucepan and add the onions. Sauté over low heat until they are soft. When they are halfway cooked, add the flour, stir, and cook lightly, being careful not to burn it.

Add the chicken broth and stir well. Increase the heat to medium and skim off any foam if necessary.

Adjust the seasoning with salt and pepper. For the egg, place it on plastic wrap, season, and close it by making a small package with a knot. Cook it lightly in boiling water for about a minute and a half, to taste. You should grease the stretched plastic wrap with butter to prevent sticking, which makes it difficult to remove.

Present the soup with the broken egg and some pieces of cheese. I used blue cheese. Another option is to add some pieces of toasted bread at the bottom of the bowl and then pour the soup over it.
