Steps

fry potatoes, leeks + onions in the oil until leeks are softening slightly.

mix in the flour to cover the ingrediants.

add herbs into the mix and stir well.

add the stock slowly, a bit at a time, stirring as you go along.

simmer for 30-40mins stirring frequently so it doesnt burn, until potatoes are cooked through.

add salt + pepper to taste.

serve as it is or blend into a smooth soup.

best served with crusty bread.
