Cracked Top Steamed Buns Without Starter Dough

This cracked top steamed bun recipe comes from the back of a Red Sunflower Flour bag by BFM. The first time I made it, I didn't expect much because I had failed with many recipes before (haha). I have succeeded with others, but they required overnight starter dough (I'm impatient and don't like waiting). This method is more complicated. Once I succeeded the first time, it became my go-to recipe. It doesn't take much time. For anyone looking for an easy recipe with high success, give it a try.

Cooking Instructions
- 1
Dissolve the yeast in half of the water and set aside (pour it into the mixing bowl).
- 2
Dissolve the ammonia in the remaining water.
- 3
Sift the two types of flour, powdered milk, and baking powder together. Add to the yeast mixture, followed by the ammonia water.
- 4
Gradually add the sugar and shortening. Knead until the sugar is completely dissolved and the dough is smooth and soft.
- 5
Divide the dough into 40 g pieces. Add filling and shape.
- 6
Steam immediately in boiling water over high heat for 5-6 minutes, then steam on low heat to remove the ammonia smell.
- 7
Tip (read somewhere): When kneading, the dough should be soft and moist. If the dough is dry, add water to increase moisture. After steaming, the dough will be soft.
- 8
Forget about the filling. Make any filling you like. I didn't measure the red pork filling; I just estimated.

I really like steamed cream cheese bread, so I decided to try it by making it myself. These are the result of much trial and error, so I am very proud of this recipe! While they're steaming, you don't want to keep opening the lid because the condensation from the lid will fall on to the dough, so after it they've steamed for 10 minutes, just take the lid off. When they're cold, just cover them in plastic wrap and microwave to warm them up again.
