Heat oil in a deep fryer to 325°F.

wash and peel potatoes and cut into batons.

deep fry for 4 minutes at 325°F

Drain and cool. Raise the fryer temperature to 375°F.

Return cooled potatoes to the deep fryer. Cook until golden brown.

Remove from oil and drain. Toss with salt.
