Ingredients

4 mediumeggs
1/2 cupmilk
1 cupvegetable oil
3 cupshredded zucchini, (about 2)
1/2 cupshredded parmesan
3/4 cupshredded mozzarella
1 cupbisquick
3 slicebacon chopped, OPTIONAL
1 cupsliced mushrooms, OPTIONAL
1salt n pepper to taste

Combine the eggs, milk, veg.oil and beat well.

Add the zucchini and mix by hand evenly.

Fold in the cheeses and bisquick.
4

Pour into a floured pie pan. Bake @ 350 for 30-45 mins til done.

I really like this sort of pie with tomatoes ! *-* ..(but then you should add some cheese as crust)
