Peach Mint Mousse with Macarons

Peel and pit the peaches.

Blend the powdered sugar, peach pieces, and mint leaves until smooth. Add the egg whites and beat with a mixer for about 7 minutes, until light and fluffy.

Divide the mousse among 12 to 18 small glasses or cups. Garnish as desired; I used macarons and finished with small mint leaves.
