Ingredients

  1. 1 cupbutter, softened
  2. 2eggs
  3. 1/2 cupbrown sugar, packed
  4. 1 tspgluten free vanilla extract
  5. 2 cupgluten free all purpose flour
  6. 1/2 tspbaking powder
  7. 1/2 tspxanthan gum
  8. 1/2 tspground cinnamon
  9. 1/2 tspsalt
  10. 4 tbspinstant expresso powder
  11. 1/4 tspground cayenne pepper
  12. 1 cup(6 ounce package) semi - sweet chocolate chips
  13. 1 cup(6ounce package) white chocolate chips
  14. 1 cupgranulated sugar

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In a large bowl, cream butter and sugars. Add eggs and vanilla; mix well.

  3. 3

    In a separate bowl, combine flour, baking powder, cinnamon, pepper, salt, xanthan gum, and expresso powder; add to butter mixture and mix well.

  4. 4

    Stir in chips.

  5. 5

    Place rounded tablespoonfuls 2 inches apart on parchment paper-lined cookie sheets.

  6. 6

    Bake at 350°F for 12 to 16 minutes. Cool on cookie sheets for 5 minutes, then transfer to wire cooling racks.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
