Ingredients

  • 1 cupwater
  • 1 cupcaster sugar
  • 1 lbdried fruit
  • 6 ozmargarine
  • 1 tspbicarbonate of soda
  • 2eggs
  • 2 cupself raising flour

Steps

  1. 1

    In a large saucepan, mix all of the ingredients apart from the flour, eggs and bicarbonate of soda.

  2. 2

    Simmer for 15 minutes.

  3. 3

    Allow the mix to cool completely.

  4. 4

    Whilst cooling, line a large cake tin with greased baking paper and preheat the oven to 302° F/ 150°C.

  5. 5

    Beat in the eggs.

  6. 6

    Sift in the flour and bicarbonate of soda and then fold everything together.

  7. 7

    Pour into the tin and bake for 1 1/2 hours on the middle shelf of the oven.

    Leave to cool in the tin.

1 1/2 hours is way too long. First attempt was terribly dry as a result. I mod'ed the recipe for try #2: cut time to 1 hour, add 2tsp of mixed spice and 1 grated cooking apple. Result was amazing!! Moist and delicious.
