Ingredients

20 servings
  1. 2 lbricotta cheese
  2. 1 1/2 cupshifted powdered sugar, plus more for garnish
  3. 2 tspground cinnamon
  4. 1/4 cupdiced candied orange peel, minced
  5. 1 tspgrated lemon peel
  6. 20unfilled cannoli shells (1/2 oz. each)**
  7. 2 ozsemi sweet chocolate, finely chopped
  8. 1Orange peel strips and fresh mint leaves for garnish
  9. 1**Cannoli shells can be found at an Italian bakeries and delis or in the ethnic food aisles at some supermarkets. If shells are unavailable, serve filling in dessert dish with sugar wafer or other cookie.

Cooking Instructions

    Beat cheese in a large bowl with electric mixer at medium speed until smooth. Add 1 1/2 cups powder sugar and cinnamon; beat at high speed about 3 - 4 minutes. Add feels to cheese mixture; mix well. Cover and refrigerated until ready to serve.

    To assemble, spoon cheese filling into pastry bag fitted with a large plain tip. Pipe about 1/4 cup filling into each Cannoli shell***

    Roll Cannoli in additional powder sugar to coat. Dip ends into chopped chocolate. Garnish, if desired.

    ***Do not make up more than 2 days ahead. Shells well become soggy.

I have a BIG collection of cookbooks, dates from mid. 1800s to 1979. I do have some new ones but it has to be in my liking. I do alot of Italian and Native American cooking a little of German and Swedish cooking but mainly it's Italian for I am Italian. I also try many recipes and create my own. I thank God every day for what He has given me and pray for what He is about to have me do tomorrow!
