cut eggplant into 1/2 inch cubes and sautee in medium sautee pan until tender. (healthy option use chicken broth instead of olive oil to sautee vegetables).

dice onion and green chilies. mince garlic.

pour beans into a strainer and rinse under cold water.

preheat oven to 400

in a large mixing bowl mix together all ingredients with the exception of the bacon.

place half the mixture into one of two loaf baking pans and the second half into the other.

lay three strips of bacon length wise across each loaf, or chop bacon into small bite-sized pieces and cover top of both loves, place in oven.

bake for 1 hour or until center of loaf reaches 165°F.
