I made this as a snack for my 1 year old son who has a milk allergy.It has a surprisingly sticky texture!Check out the sister recipe "Sweet Potato Cake".I wondered what would happen if I microwaved an uncovered and unpeeled banana, so I tried it. One of my favorite breakfasts, very fast to make and you can always add any type of toppings you like. The banana gives it a special texture, you have to like it, because some people feels like it is raw and don’t enjoy it.

I have a thing for bananas this is a pretty nice cake the sugar is reduced as I find the bananas and sometimes I use raisins add to the sweetness..the vanilla essence I tend to use to my heart demise..so use an amount thats appropriate to your tastes

I am not diabetic but I am not eating sugar as a precautionary measure. I am enjoying eating this cake with my husband. Our friends loved it as well, so I decided to share it.
