White Chocolate and Berry Muffins

Cooking Instructions

Preheat oven to 190°C.

Sift the flour into mixing bowl. Add the castor sugar, white chocolate and berries. Stir to combine. Note: You can use whatever combination of berries you want. I like to use strawberries and raspberries.

In a separate bowl, whisk together the lemon juice, milk, oil, egg and vanilla.

Add wet ingredients to the dry ingredients and stir to combine. Do not overmix.

Spoon mixture into prepared muffin pans. It should make 12-14 large muffins.

Bake for 25 minutes. To test, press the middle of the muffins lightly; it should spring back. Cool on a wire rack.
